- Blend: Add the cas pulp, cold water, and sugar to a blender. Blend until smooth.
- Strain: Pour the mixture through a fine mesh strainer into a pitcher to remove any fibrous bits.
- Serve: Add ice cubes and serve cold for a refreshing drink.
Pejibaye (Peach Palm Fruit) Pejibaye is a starchy fruit often enjoyed as a savory snack or side dish. It’s commonly boiled and served with mayonnaise or butter.
Pejibaye en Mantequilla (Pejibaye with Butter) Recipe:
- Ingredients:
- 12 pejibayes
- Water for boiling
- Salt to taste
- 2 tablespoons of butter
- Optional: Mayonnaise for dipping
- Instructions:
- Boil the Pejibaye: In a large pot, cover the pejibayes with water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for about 1.5 to 2 hours, or until the pejibayes are tender.
- Cool and Peel: Once cooked, let the pejibayes cool slightly, then peel off the skin and remove the seed from the center.
- Serve: Cut the pejibayes in half and toss them with butter while still warm. Serve as a snack or side dish. Optionally, dip in mayonnaise for extra flavor.
