  1. 10 ripe cas fruits
  2. 4 cups of cold water
  3. 1/2 cup of agave (adjust to taste)

  1. Prepare the Cas: Cut the cas fruits in half and scoop out the pulp. Be careful to remove any seeds.
  2. Blend: Add the cas pulp, cold water, and sugar to a blender. Blend until smooth.
  3. Strain: Pour the mixture through a fine mesh strainer into a pitcher to remove any fibrous bits.
  4. Serve: Add ice cubes and serve cold for a refreshing drink.

Pejibaye (Peach Palm Fruit) Pejibaye is a starchy fruit often enjoyed as a savory snack or side dish. It’s commonly boiled and served with mayonnaise or butter.

Pejibaye en Mantequilla (Pejibaye with Butter) Recipe:

  • Ingredients:
  1. 12 pejibayes
  2. Water for boiling
  3. Salt to taste
  4. 2 tablespoons of butter
  5. Optional: Mayonnaise for dipping
  • Instructions:
  1. Boil the Pejibaye: In a large pot, cover the pejibayes with water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for about 1.5 to 2 hours, or until the pejibayes are tender.
  2. Cool and Peel: Once cooked, let the pejibayes cool slightly, then peel off the skin and remove the seed from the center.
  3. Serve: Cut the pejibayes in half and toss them with butter while still warm. Serve as a snack or side dish. Optionally, dip in mayonnaise for extra flavor.
